Requesting sugar-free eggnog?...well here is a wonderful recipe for a sugar and alcohol free eggnog and is made with Splenda. I am sure you could use any brand of sweetener that you like. So, it is a win, win recipe overall with less sugar, fat and calories. Hope you enjoy the healthier version of Eggnog.

Ingredients For elegant eggnog

3/4 csplenda® no calorie sweetener, granulated

1 Tbsparrowroot or cornstarch

1 1/2 tspfresh ground nutmeg

7egg yolks
-
4 c2 % milk
-
2 cfat-free half n half
-
2 Tbspvanilla extract
-
1 tsprum extract
How To Make elegant eggnog

1Mix together first 3 ingredients in a large heavy saucepan. Set aside. Whisk egg yolks. Add to SPLENDA Granulated Sweetener mixture whisking until blended. Gradually whisk in milk.

2Cook over low heat, whisking constantly until the temperature reaches 175 degrees approximately; after about 8 minutes I turned up the heat some to get it to the temp. I needed. (12 to 15 minutes). Remove from heat and whisk in half and half; cool.

3Cover and chill 3 hours or up to 3 days. Stir in vanilla & rum extract just before serving.
