Strawberries are handsdown my favorite fruit. That fresh sweet smell grabs my attention everywhere. I love fresh squeezed lemonade. There is nothing more nostalgic that a glass of ice cold lemonade. The only thing better is strawberry lemonade. You can have it all year long. Follow the recipe and you won't be disappointed. If you are having an adult get together fill a glass with ice some of this reconstituted lemonade and a splash of vodka. The ladies will love it. I am also gifting each of the ladies in our Annual Christmas cookie exchange this year a pint to take home and enjoy.

Ingredients For strawberry lemonade concentrate

  • 6 c
    hulled and crushed strawberries
  • 4 c
    fresh squeezed lemon juice
  • 6 c
    granulated sugar
  • 7 jar
pint size canning jars (16 oz.)

How To Make strawberry lemonade concentrate

  • 1
Prepare boiling water canner. Keep jars warm until ready to use. Do not boil.
  • Puree your strawberry in batches until smooth. If you have an attachment to your mixer for juicer use that. Saves on the hands and wrist. I had to use a manual juicer.
    2
Puree strawberries in a food processor, working in batches, set aside. Transfer to a large stainless steel pot.
  • My 1st batch I threw in the lemon rind because there is so much flavor and the heat pulls the flavor out. You will want to squeeze the lemon rinds to get all that flavor out and back into the pot.
    3
Add lemon juice and sugar to strawberry puree, stirring until combines and sugar dissolved. Heat to 190 degrees over medium heat. Do not boil. Remove from heat.
  • The most important step. Stay close to the stove and watch your mixture. Do not boil and make sure it comes up to 190 degrees.
    4
Ladle the concentrate into the hot jars leaving 1/4 inch headspace. Wipe rims and add lid and band and twist until tight. Do not over tighten. Repeat until all jars are filled.
  • 5
Process is water bath boiling for 15 mins. Remove jars and cool. Check to make sure each jar is sealed after 24 hours.
  • 6
To reconstitute, mix 1 part of concentrate with 3 parts of water, 7up, or Gingerale adjust to suit your taste. It's delicious!
