This is a recipe from the Azores Islands (just off the west coast of Portugal). They're known for growing some of the world’s best pineapples that pack quite an intense citrus flavor. Today, the Azorean island of São Miguel hosts more than 6,000 pineapple greenhouses (something that’s unique to the Azores) which raise the majority of the pineapples sold in the Azores and Portugal. This recipe features fresh São Miguel pineapple and locally grown lemons and limes, and it results in a refreshing, tangy pitcher of the best lemonade available.

Ingredients For pineapple lemonade

  • 1/2 c
    granulated sugar
  • 1 c
    water
  • 1 c
    fresh lemon juice
  • 1 c
    fresh pineapple juice
  • 2 Tbsp
    fresh lime juice
  • 5 c
    cold water
  • 1 lg
    lemon, thinly sliced
  • 1 md
    lime, thinly sliced
  • 5-8 sprig
    fresh mint leaves
  • ice cubes (when serving)

How To Make pineapple lemonade

    Make a simple syrup by combining the sugar and 1 cup water in a medium saucepan over medium heat, stirring frequently, for 5 minutes or until the sugar is completely dissolved. Let cool.

    In a large pitcher, whisk together the cooled simple syrup, lemon juice, pineapple juice, lime juice and 5 cups water. Add the sliced lemon, sliced lime and mint leaves, and stir gently. Place pitcher in the refrigerator to chill until ready to serve.

    To serve, pour into tall glasses over ice cubes.
