Whenever I need buttermilk, I use this recipe. Very good for cooking and drinking. This just makes 1 quart. Recipe doubles quite nicely . My ex-mother-in-law gave me this recipe over 20 years ago, and if I recollect she got it from a powdered milk container.

How To Make overnight buttermilk
-
1you have to start with 1/2 cup fresh, store bought buttermilk and a quart (4 cups) of powdered milk. Use directions on powdered milk container to make 1 quart of milk.
-
2Combine fresh buttermilk and powdered milk mix in a pitcher or jar. Mix really well. Allow to stand at room temperature overnight, or for about 8 hours.

3The milk will have thickened up and cultured into regular buttermilk. Refrigerate to chill and use anywhere fresh buttermilk is called for. I always mixed in a pitcher.
