10-14organic lemons

750 mleverclear grain alcohol or 80+ proof vodka

How To Make homemade limoncello recipe

1Wash your lemons with white vinegar and water to remove any dirt and residue, then peel the rind into long strips. Be careful to scarp off ALL the white pith from the rind it will make the Liqueur bitter.

2For Grain Alcohol 190/189 proof, the peel 10 lemons is ok, for Vodka you will need up to 14 lemons. The lower the proof of the alcohol the more lemon peels you need.

3Place the lemon peels in an airtight jar 64ounces or larger. Cover with the Grain Alcohol or Vodka. Seal tightly and place out of direct sunlight. Be sure to shake daily and allow lemon rind to infuse for 4-10 days for Grain Alcohol or up to 1 month for Vodka. The infusion is ready when the lemon peels are almost white.

4The next step is to make a Simple Syrup. Heat the water in a large saucepan over high heat. Pour in the sugar and bring to a boil be sure to whisk the mixture continuously until all the sugar has dissolved completely. BE CAREFUL not to let the mixture boil over. Th is step will take 1-2 minutes. Allow to cool completely before moving to the next step.

5Pour the room temperature syrup into the lemon infusion. Tightly seal the jar and shake to combine. "NOTE: You can substitute 40 ounces of store brought Simple Syrup for the homemade and skip step 4"

6Strain the lemon peels out of the limoncello through a Chinois or a fine mesh strainer. Then pour into serving bottles and refrigerate.
