This is pretty much the DIY buttermilk recipe that you have used like forever, but with one additional ingredient that I believe takes it over the top… buttermilk powder, but more on that later.

  • 1 c
    whole milk
  • 2 tsp
    buttermilk powder
  • 1 Tbsp
    white vinegar, or lemon juice, freshly squeezed

    Why Buttermilk Powder? Well, if you have buttermilk powder, you can mix it with water to get buttermilk…
    Question: Have you ever tasted buttermilk powder dissolved in water?
    I do not know what that stuff is, but is sure does not taste like buttermilk to me. However, when you add a bit to this recipe, it really gives the buttermilk a deep rich flavor; almost as if you are drinking fresh cultured buttermilk.
    Not all buttermilk powders are created equal. This is the brand, I have been using for years:

    If I have a choice between the vinegar and lemon juice, I think the freshly-squeezed lemon juice, wins out.

    Gather your ingredients (mise en place).

    Pour the milk into a container, and let it sit on the countertop for about 15 minutes, just to take the chill off.

    Add the buttermilk powder, whisk to combine, and let stand for 5 minutes.

    Add the vinegar, or lemon juice, and let stand an additional 10 minutes.

    Whisk to combine, and place in the fridge until needed.
