If you make a lot of cocktails, you are probably familiar with simple syrup… You can buy it or make your own. Just bring 50% water, and 50% granulated sugar to a boil, remove from heat, cool, and there you go… simple syrup. One of my cousins who works part-time at a few bars in London was over here last week, and we put our heads together on a few drink ideas. This is one of them. So, you ready… Let’s get into the kitchen.

    PREP/PREPARE
  • 2
I am doing two things different. I am using coconut sugar, in place of the white granulated variety, and I am adding some lime zest. This creates deep flavors, reminiscent of the islands.
  • 3
Gather your ingredients (mise en place).
  • 4
Zest 1/2 half a lime and reserve the juice for another recipe.
  • 5
Add the water to a small saucepan, then add the sugar, and zest.
  • 6
Whisk, and slowly bring up to the boil.
  • 7
Remove from the heat and allow to cool, about 30 minutes.
  • 8
Strain the zest from the liquid, discard, and store the simple syrup in a sealed jar in the fridge until ready to use. It should last 5 – 6 weeks.

Use in any drink recipe that calls for simple syrup; especially those with a more tropical theme. Enjoy.
