Currently Spring is spreading its wings across the land; bringing with it cool evenings and warm days. However, as sure a Spring comes every year, it is faithfully followed by Summer, with its blistering days, and sweltering nights. Tame those days with one of these coconut, coffee, and cream drinks. Cool and refreshing, you will probably want to make this in batches. So, you always have some on hand. So, you ready… Let’s get into the kitchen.

  • coffee, fine grind
  • toasted unsweetened coconut
  • heavy cream

    For this dish, you will need a single-serving French coffee press. If, however, you do not own one, I have a suggestion… place the ingredients into a heatproof bowl. When it is ready, pour it through a fine-mesh strainer, fitted with a coffee strainer, or double-folded cheesecloth. As a matter of fact, you could use this method to make a batch of these yummy drinks. Just remember that the ingredient amounts are based on 12 ounces of water.

    I have tried this recipe using coconut milk, and coconut extract, but nothing gives it that deep, rich taste that is achieved with freshly toasted coconut.

    For the cream, I am using a standard shot glass.

    Gather your ingredients (mise en place).

    Place the coconut into a pan over medium heat.

    Cook until browned, about 4 – 7 minutes.

    Boil the water, and place the coffee, and the coconut into the coffee press.

    Pour in the boiling water.

    Place the press on top, but do not push down the plunger.

    Place in the refrigerator, until cold, about 1 – 2 hours.

    Remove from the fridge, and push down the plunger.

    Pour into a tall glass full of ice, making sure to leave room for the cream.

    Pour in the cream in a slow steady stream.
