This recipe is from Taste of Home's Holiday Recipe Card Collection magazine for 2003. This is a lovely recipe for winter and especially, holiday time. Take your cup of cheer to sit by the fireside, while watching your special holiday show. (Sugar-free-option, my change.)

Ingredients For mock eggnog

2 qtcold milk

1 pkg(3.4 ounces) instant french vanilla or vanilla pudding mix*

1/4 csugar*

1 tspground nutmeg

1 tspvanilla extract
-
1/8 tspsalt (optional)

1 cheavy whipping cream
-
additional nutmeg (optional)

*use sugar-free products for substitutions, to make diabetic friendly (my change)
How To Make mock eggnog

1In a mixing bowl, beat milk and pudding mix (regular or sugar-free), on low speed for 2 minutes. Beat in the sugar (or sweetener), nutmeg, vanilla, and salt (if using).

2In another mixing bowl, beat cream, until thickened, about 3 minutes. Stir into pudding mixture. Refrigerate, until serving.

3Sprinkle with additional nutmeg, if desired. Makes 2 1/2 quarts, about 10 servings.
