While on a trip to Jamaica,we rented a house,I would sometimes go to the kitchen and watch the cook make meals,this is one of the drinks she made. I don't like regular carrot juice,but I LOVE this version. The cook added a bit of rum to each glass. Actually she added a lot of rum! Add to your taste!

Ingredients For jamaican carrot juice

2 lbs carrots

1 can condensed milk

1 t fresh ground nutmeg

3 t vanilla

5 c water
How To Make jamaican carrot juice

1Wash and Scrape off the outer skin of carrots. Cut up the carrots into small chunks, put in blender, add a little water then blend (puree) until it is all done. Pour the blended mixture through a fine grain strainer into a container. Keep juice & discard. Repeat 2-3 times until all the carrots are blended and you have only the juice. Mix in the vanilla and nutmeg,to taste. Add condensed milk to taste(for sweetness). Chill and serve.
