This is another version of the Caffè in ghiaccio from the Italian region Salento (heel of the Italian boot). Instead of sugar, it uses almond milk to sweeten the coffee. Traditional almond milk is quite thick and sweet, so if your regular modern almond milk is not sweet enough, just add a teaspoon of almond syrup.

How To Make caffè leccese

1Brew one very strong espresso.

2Place almond milk and the two ice cubes (as dry as possible) in a glass, pour hot espresso over it and drink as quickly as possible so it doesn't water down.

3You can also add a teaspoon of almond syrup for stronger almond flavour and more sweetness.
