Ingredients For welsh summer berry cooler

  • 1 c
    assorted berries, raspberry, blueberry, blackberry and strawberries
  • 1 bottle
    welsh sparkling wine
  • 1 Tbsp
    caster sugar
  • 3 Tbsp
    eldelflower cordial
  • 1/2 c
    assorted berries, for garnish

How To Make welsh summer berry cooler

  • 1
    Place berries in a blender and add the sugar. Process until smooth. Pass the berry puree through a sieve, this is a coulis.

    Add the coulis to a pitcher, and add the eldelflower cordial. Slowly, add the sparkling wine and softly mix to blend.

    Place a few whole berries in each glass and serve at once.
