Just another refreshing way to use some early summer rhubarb! Can leave off the hard liquor and increase the Prosecco, if you like.

Ingredients For rhubarb fizz

  • 6-8 oz
    gin or vodka
  • 1/2 c
    fresh lemon juice
  • 12 oz
    prosecco or another sparkling white wine/
  • 1 c
    rhubarb syrup
  • 6 slice
    lemon, for garnish
  • ice

How To Make rhubarb fizz

  • 1
    Combine vodka or gin, syrup, and lemon juice in a pitcher and stir to combine.
  • 2
    Divide among ice-filled glasses and top off each with 2 ounces Prosecco. Stir gently and garnish with lemon rounds. Serve immediately.
