With less than a month until the 2021 Kentucky Derby at Churchill Downs, I pulled out my favorite recipe for the Derby Mint Julep. And...they're off! This summertime refresher stirs up in mere minutes. I use spearmint because that’s what I have growing in pots on the deck but whatever mint you like or have on hand will work. Traditionally a splash of spring water is used, but I like the added bit of effervescence from the club soda.

Ingredients For renee's derby mint julep

  • 5 - 6
    spearmint leaves; plus a stem for garnish
  • 1 tsp.
    superfine sugar or simple syrup
  • 2 ½ ozs.
    bourbon ( use maker's mark)
  • crushed ice
  • club soda

How To Make renee's derby mint julep

  • 1
    Place the mint leaves in the bottom of a glass and top with simple syrup or sugar, I prefer the superfine sugar – it helps to break down the mint leaves but suit yourself.

    Using a muddler, crush the leaves in the bottom of a glass until they begin to break down.

    Add the bourbon to the glass and stir.
  • 4
    Fill with crushed ice, give another quick stir, and top with a splash of club soda.
  • 5
    Garnish with mint and serve immediately.
