From a mixologist who said his favorite dessert, the grapefruit granita, was the inspiration for creating a grapefruit version of the classic Cuban cocktail Mojito. He first prepares a grapefruit granita dessert to use for the citrus flavoring in this cocktail. He said you can achieve the same results by using grapefruit juice, so I altered the recipe using bottled graprefruit juice, and it's fantastic! It strikes the perfect balance between sweet and tart. The distinct fragrance and taste of the fresh mint is delectable, but the pairing of the grapefruit and mint together is a heavenly match.

Ingredients For pink grapefruit mojito

1lime wedge

1 to 2 tspsugar (for rim)

6 to 7fresh mint leaves

1/2 tspgrapefruit zest (optional)

1 ozsimple syrup (more or less, to taste)

1 1/2 ozlight rum

4 to 5 ozpink grapefruit juice

2 to 3 ozclub soda (or as needed to fill glass)

1grapefruit segment (for garnish)
How To Make pink grapefruit mojito

1Rub the lime wedge across the rim of a large (8-oz size) old-fashioned glass. Dip the rim in the sugar.

2Tear mint leaves and place in the bottom of the old-fashioned glass. Add grapefruit zest (if using) and simple syrup, and muddle the mint leaves, to release the mint flavoring. Add ice cubes to the glass.

3Gently pour in rum and pink grapefruit juice over the ice (being careful not to knock any of the sugar off the rim). Top off with a few splashes of club soda. Stir gently to blend the flavors.

4Garnish with a fresh grapefruit segment, and serve immediately.
