This cocktail was (to the best of my knowledge) first created at Chili's Restaurant. It's no longer on Chili's menu, so I thought it best to jot down the ingredients and save the cocktail recipe here so it's available whenever I care to enjoy this tasty tropical cocktail.

Ingredients For calypso cooler

  • 1
    orange wedge (for garnish)
  • 1
    maraschino cherry (for garnish)
  • 1 1/4 oz
    spiced rum (captain morgan's recommended)
  • 1/2 oz
    peach schnapps
  • 4 oz oz
    orange juice (about 1/4 cup)
  • 1 splash
    rose's lime juice
  • 1/2 oz
    grenadine
  • 1/2 cup
    ice cubes

How To Make calypso cooler

  • 1
    First prepare fruit skewer by placing orange wedge and cherry on a toothpick; set aside.

    Add ice to a 16-oz glass. Pour all of the liquors and juices (rum to grenadine) into the glass in the order listed. Don't stir.

    Garnish with the fruit skewer, and serve immediately with a straw.
