Ingredients: CAKE:; 1 1/2 cups sugar; 2 cups cooking oil; 2 eggs; 1 teaspoon vinegar; 2 ounces red food coloring (I usually use only 1 ounce); 2 1/2 cups plain flour (ie all purpose) (I also sift the flour); 1 teaspoon baking soda; 1 teaspoon salt; 2 tablespoons dry unsweetened cocoa powder; 1 cup buttermilk; 1 teaspoon vanilla extract; FROSTING:; 1 stick (8 tablespoons) butter or margarine; 1 teaspoon vanilla extract; 1 8oz. package cream cheese (softened); 1 16oz. package confectioner's sugar (sifted); 1 cup chopped pecans
