1/2 cup canned peeled tomato, drained and roughly chopped

1/3 cup finely diced celery

1/2 cup finely diced onion

1 garlic clove, minced

1 tablespoon dried basil
•
1 tablespoon dried thyme
•
1 tablespoon dried oregano

1 teaspoon coarse salt

6 slices of raw bacon

1 1/2 cups water

1/2 cup dripping, from the meatloaf
