Ingredients For tropical bread pudding

6 cbread cubes (1-inch cubes-about 6 slices)

1 can(13 oz) coconut milk

1 can(6 oz) pineapple juice

1/4 cbutter, melted

1/2 cgranulated sugar

2eggs

1/4 tspsalt

1/2 tspground cinnamon

1/2 tspground nutmeg

1/2 tspground ginger
How To Make tropical bread pudding

1Preheat oven to 350F. Lightly coat a 1 1/2 quart baking dish with nonstick cooking spray.

2Place cubed bread in a large mixing bowl; set aside.

3In another bowl, mix remaining ingredients until well blended. Pour over the bread and stir to moisten bread.

4Pour mixture into the baking dish. Bake 40-45 minutes, or until knife inserted into center comes out clean.

5Cool on wire rack. May be served warm or room temperature. Store leftovers in refrigerator.
