Ingredients For sweet potato rice pudding

  • 1 c
    arborio rice
  • 1 Tbsp
    transfat-free vegetable oil spread, melted
  • 1 c
    cooked sweet potato cubes
  • 1/3 c
    sweetened flaked coconut
  • 1/2 c
    coconut milk
  • 1 c
    brown sugar
  • 1 tsp
    cinnamon
  • 1/2 tsp
    allspice
  • 1/2 c
    dried apricots, coarsely chopped
  • 1
    carton (32 oz.) vanilla flavored almond milk
  • 1/2 c
    light cream

How To Make sweet potato rice pudding

    Stir rice and vegetable oil spread into a slow cooker coated with cooking spray.

    Puree the sweet potatoes, coconut, coconut milk, brown sugar, cinnamon, and allspice in a blender.

    Transfer to cooker and add apricots, almond milk, and cream. Stir.

    Cover. Cook on HIGH setting, stirring halfway through, for 2 to 2-1/2 hours, or until creamy. Serve with a dollop of whipped cream sprinkled with cinnamon.
