This is something I found on some old floppy discs from the 1990s, from a BBS I used to belong to. I haven't made it yet and the cooking time wasn't given, so I estimated. Putting some of those old recipes here for safe keeping.

Ingredients For sweet potato pudding

1 lbraw sweet potatoes, peeled

1/2 csugar

1/8 tspsalt

1/8 tspground nutmeg (or more to taste)

1 tspvanilla extract

2eggs, separated

2 cmilk
-
2 Tbspunsalted butter, melted
How To Make sweet potato pudding

1Preheat oven to 350F. Grease (or use nonstick spray) a 2 quart baking dish or casserole.

2Grate sweet potatoes, using the shredder disc of a food processor, or a box grater. You should have about 2 cups of grated raw potato.

3In a mixing bowl, add sugar, nutmeg and vanilla to potatoes.

4In a bowl, beat egg yolks, stir in milk and melted butter and add to potato mixture.

5In a clean bowl, beat egg whites until stiff. Fold into potato mixture.

6Bake 45-50 minutes, or until firm.

7Serve warm, topping with whipped cream
