Ingredients For slowcooker pineapple rice pudding

1 can20-ounce can crushed pineapple in juice, undrained

1 cancoconut milk (13 1/2 oz.)

1 cannonfat evaporated milk (12 oz.)

3/4 carborio rice
-
2eggs, lightly beaten
-
1/4 csugar
-
1/4 clight brown sugar
-
1/2 tspground cinnamon
-
1/4 tspground nutmeg
-
1/4 tspsalt
-
toasted coconut for garnish (optional)
How To Make slowcooker pineapple rice pudding

1Place pineapple with juice, coconut milk, evaporated milk, rice, eggs, both sugars, cinnamon, nutmeg and salt into a slow cooker; mix well. Cover; cook on HIGH heat 3 - 4 hours or until thickened and rice is cooked.

2Remove cover and stir to mix thoroughly. Serve warm or chilled with toasted coconut, if desired.
