My husband loves rice pudding and I find that sometimes the pudding separates while cooking in the oven now that we have switched to skim milk. This recipe is cooked on top of the stove and is delicious, creamy and so easy to make.

Ingredients For rice pudding

  • 2 Tbsp
    butter
  • 1/2 c
    short grain rice
  • 1/4 tsp
    ground cardamom
  • 1/4 tsp
    cinnamon
  • 21/2 c
    milk ( i use skim) but use what you like
  • 2 Tbsp
    sugar
  • 1 tsp
    finely grated orange peel
  • 1
    a handful of raisins!! i almost forgot!!!

How To Make rice pudding

  • 1
    In small saucepan, melt butter over medium heat. Add rice, cardamom and cinnamon; stir to coat. Stir in milk raisins and sugar; bring to boil. Reduce heat, cover and simmer, stirring often, until most of the liquid is absorbed and rice is tender, about 25 minutes. Stir in orange rind. Serve warm.
