This is a creamy rice pudding I have always liked. I like it warm with a little whip cream.

Ingredients For rice pudding

4 cscalded milk

2 cquick cooking long grain rice

dash of salt

1/2 craisins (optional)

1 cevaporated milk
-
2slightly beaten eggs
-
1/2 csugar
-
1 tspvanilla extract
-
dash of cinnamon & nutmeg

whip cream
How To Make rice pudding

1In the top of a double boiler mix together milk, rice, salt, cinnamon, nutmeg and raisins (optional). Simmer over medium-high heat about 20 minutes.

2In a medium bowl use a wire whisk to beat together evaporated milk, eggs, sugar and vanilla. Stir in rice mixture. Cook stirring constantly until thickened about another 10 minutes or so.

3Pour into serving dishes or a large serving bowl. Spoon into individual dishes and garnish with whip cream.
