I had lunch with my friend and she served this for dessert. I am not a fan of rhubarb, but this is really good.

Ingredients For rhubarb pudding

6 to 7 crhubarb

1 1/2 csugar

6 Tbspbutter at room temp.

1 cmilk

2 cflour
-
2 tspbaking powder
-
1/2 tspsalt
-
2 csugar
-
2 Tbspcornstarch
-
1/4 tspsalt
-
2 cboiling water
How To Make rhubarb pudding

1Mix sugar and butter (room temp) together. Set aside In mixing bowl mix 1 cup milk, 2 cups flour, 2 tsp baking powder, 1/2 tsp salt. Add the sugar butter mixture and mix well. Pour over the rhubarb.

2Mix the 2 cups of sugar, 2 Tbsp corn starch and 1/4 tsp salt together. Pour this evenly over the dough and then pour 2 cups boiling water over all. Bake at 375 degrees for 1 hour or until toothpick stuck in pudding comes out clean.
