rhubarb pudding

I had lunch with my friend and she served this for dessert. I am not a fan of rhubarb, but this is really good.

Ingredients For rhubarb pudding

  • 6 to 7 c
    rhubarb
  • 1 1/2 c
    sugar
  • 6 Tbsp
    butter at room temp.
  • 1 c
    milk
  • 2 c
    flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2 c
    sugar
  • 2 Tbsp
    cornstarch
  • 1/4 tsp
    salt
  • 2 c
    boiling water

How To Make rhubarb pudding

    Mix sugar and butter (room temp) together. Set aside In mixing bowl mix 1 cup milk, 2 cups flour, 2 tsp baking powder, 1/2 tsp salt. Add the sugar butter mixture and mix well. Pour over the rhubarb.

    Mix the 2 cups of sugar, 2 Tbsp corn starch and 1/4 tsp salt together. Pour this evenly over the dough and then pour 2 cups boiling water over all. Bake at 375 degrees for 1 hour or until toothpick stuck in pudding comes out clean.
