Picked up the recipe from a magazine at the doctor's office. Tried it and it's delish!

Ingredients For pumpkin mousse

1 pkgpudding, sugar free vanilla (small box)

1 tspcinnamon, ground

1/2 tspginger, ground

1/4 tspnutmeg
-
1 1/2 c2% milk

1 ccanned pumpkin puree

1 ccool whip, fat free

3gingersnap cookies, crushed
How To Make pumpkin mousse

1Whisk dry pudding with the spices to mix thoroughly.

2Whisk in milk. Whisk 2 minutes.

3Add pumpkin and whisk until it begins to set. Fold in Cool-Whip.

4Cover aqnd chill for 1 hour.

5In 6 small dessert cups, add 1/4 cup of the pudding - sprinkle with crushed gingernsaps - add another layer of pudding.
