Ingredients For pumpkin bread pudding w/ brown sugar yogurt sauce

12 slicecracked, or whole wheat bread, cut into cubes, - 12 cups

1 csweetened, dried cranberries, chopped

2 canevaporated milk

1 can15 oz - pure pumpkin

4 lgeggs, slightly beaten

1 cbrown sugar, firmly packed

1 tspvanilla extract
-
2 tsppumpkin pie spices

1/4 tspsalt
- BROWN SUGAR YOGURT SAUCE
-
26 oz. containers of non fat plain yogurt

3 Tbspbrown sugar, firmly packed

splash of rum
How To Make pumpkin bread pudding w/ brown sugar yogurt sauce

1PUDDING: Preheat oven to 350 degrees F. Grease and Flour a 13x9x2 baking dish.

2Combine cranberries and bread that has been cut into cubes, in a large bowl.

3Combine evaporated milk, pumpkin, eggs, vanilla, pumpkin spices,and salt in medium bowl.

4Pour egg mixture over bread mixture, stir. Let stand 10 minutes.

5Bake 45-55 minutes or until knife inserted comes out clean. Serve warm with brown sugar yogurt sauce.

6BROWN SUGAR YOGURT SAUCE: Combine yogurt, brown sugar, and rum in small bowl. Pour over pudding while it's hot. May serve with whipped cream
