Ingredients For "pouding" au riz

3 cwhole milk

1/4 chalf and half or heavy cream

3/4 cmaple syrup

1/2 carborio rice
-
1/2vanilla bean, split and scraped or 1 teaspoon vanilla paste

orange zest, for garnish
How To Make "pouding" au riz

1Pour the milk, half and half (or heavy cream) and maple syrup into a saucepan. Heat mixture over medium heat until very hot but not boiling.

2When the milk is hot, stir in the arborio rice. Reduce heat and simmer about 40 minutes, stirring often. Cook until the milk is creamy and the rice is cooked. I covered the pan while it simmered.

3Stir in the vanilla bean (extract). Transfer pudding to either a serving bowl or individual dessert bowls.

4Garnish with orange zest. Delicious warm or cold.
