perfect christmas pudding

I've been looking for a traditional "English" or "Plum" pudding for Christmas. I will work on this and get it fixed by the next holiday season. I have not tried this recipe yet, as I "adopted" it from the JAP site. I plan to try it closer to the holidays. Anyone that wants to can try it, if they like. Let me know your results.

Ingredients For perfect christmas pudding

24dried figs

1 cwalnuts, toasted, chopped

1/3 clight molasses

1/2 tspsalt

1 tspcloves

1 tspcinnamon

1 tspallspice

1 tspbaking soda

2.5 tspbaking powder

1.5 call purpose flour

3 Tbspquick cooking tapioca

3/4 csugar
-
2 csoft bread crumbs, lightly packed

1 cshortening

1.5 cmilk

3egg whites
How To Make perfect christmas pudding

1With scissors, snip stems from figs.

2Then snip figs into small pieces.

3Heat them in milk in top of double boiler until figs are soft (about 20 minutes).

4Remove from heat, stir figs thoroughly until mashed.

5Add shortening, bread crumbs, sugar and tapioca.

6Sift and measure flour, and sift again with other dry ingredients.

7Add with molasses and chopped walnuts.

8Fold in stiffly whipped egg whites.

9Turn into generously buttered 2-quart mold, cover tightly and steam, covered, for 3 hours on a rack in hot water that must come half-way up side of mold.

10Or steam in individual molds.
