I made this to complement a steak dinner. It was my first attempt at creating my own recipe. The family loved it.

Ingredients For orange-pineapple parfait

  • 1 box
    4 1/2 oz box vanilla pudding (regular or sugar-free)
  • 1 can
    8 oz can crushed pineapple - drained
  • 1 can
    orange pineapple concentrated juice
  • 2 Tbsp
    sugar or sugar substitute
  • 1 1/2 Tbsp
    corn starch
  • 1 1/4 c
    of cold water
  • 2 3/4 c
    milk - regular, low fat or skim

How To Make orange-pineapple parfait

    Pudding Layers: Combine juice and water and set aside Combine pudding and milk per directions on box until pudding thickens. Heat 1/4 cup of juice mixture with 2 tbsps. of pineapple and add to pudding. Set aside

    Sauce: Slowly combine remaining juice with sugar and corn starch. Heat until mixture thickens and becomes clear. Fold in remaining pineapple

    Alternate layers of pudding and sauce, starting with pudding, by spooning into parfait or drinking glasses that are slightly tilted. (Pouring in layers will cause them to combine and lose the parfait effect) Top with the sauce and serve at room temperature or cold.

    Options: Top with whipped cream and a cherry before serving.
