I was cleaning the kitchen cabinets today trying to organize for more run. I came upon this recipe box that was one of my mothers. Out came this recipe just in time for the season. I hope some of you may know of this recipe I did not. But oh so good. She did not put an authors name on it or where she found it. Just the recipe card in her hand writing which is more precious to me than the recipe.

Ingredients For old south grated sweet potato pudding-jamie

  • 2 c
    raw grated sweet potatoes
  • 1 c
    sugar
  • 1 c
    half and half
  • 1/4 c
    butter, melted
  • 1/2 tsp
    cinnamon
  • 1/4 tsp
    cloves ground
  • 1/4 tsp
    allspice
  • 1/2 tsp
    salt
  • 1/4 tsp
    nutmeg
  • 1/4 tsp
    lemon flavoring
  • 2
    eggs
  • flour to make thick

How To Make old south grated sweet potato pudding-jamie

    Peel and grate raw sweet potatoes enough to make 2 cups. I used one large sweet potatoe and it made more than 2 cups so peel and grate measure first before continue to peel potatoes.

    Place in a mixing bowl and add all the dry ingredients in.

    Beat the eggs and add to the mixture.

    Blend in the milk and beat together all the mixture at this point. Add about 1 tsp of flour just enough to make thick.

    Pour into a greased casserole dish about 9x8 or round 2 quart dish.

    In a preheated 350 degree oven bake for one hour. Or keep checking for tenderness and pudding like you may be able to take out sooner depending on the potatoe used.
