1IN THICK SAUCEPAN, COMBINE SUGAR, CORNSTARCH, AND SALT; STIR IN MILK. COOK OVER MEDIUM HEAT, STIRRING CONSTANTLY, UNTIL THICKENED. SIMMER, UNCOVERED, FOR 15 MINUTES, STIRRING OCCASIONALLY.

2BEAT EGG YOLKS; ADD 3 TABLESPOONS HOT MIXTURE AND BLEND, THEN POUR YOLKS INTO HOT MIXTURE. COOK 5 MINUTES, STIRRING CONSTANTLY. REMOVE FROM HEAT AND ADD VANILLA.

3LINE BOTTOM OF 2 QUART CASSEROLE DISH WITH 12 VANILLA WAFERS, THEN TOP WITH LAYER OF 1/3 OF SLICED BANANAS. POUR A THIN PORTION OF CUSTARD ON TOP. CONTINUE TO LAYER WAFERS, BANANAS AND CUSTARD, ENDING WITH CUSTARD ON TOP.

4OPTION 1 -- BAKE 5 MINUTES OR UNTIL DELICATELY BROWNED IN 425 DEGREE OVEN; COOL.

5OPTION 2 -- MAKE MERINGUE BY BEATING 4 EGG WHITES WITH 1 TEASPOON VANILLA UNTIL SOFT PEAKS FORM, THEN SLOWLY ADD 8 TABLESPOONS SUGAR AND BEAT UNTIL GLOSSY. SPREAD OVER PUDDING AND PLACE IN PREHEATED 350 DEGREE OVEN FOR 12-15 MINUTES OR UNTIL DELICATELY BROWNED. COOL.
