Ingredients For molasses rice pudding

2 lgeggs, lightly beaten

1 1/2 cmilk

1/4 cgranulated sugar

1/4 cmolasses

1/2 tspsalt

1 tspvanilla extract

1/4 tspground cinnamon

1/2 tspground nutmeg

1 1/4 ccooked white rice

1/2 craisins (optional-or use dried cranberries)
How To Make molasses rice pudding

1Preheat oven to 350F. Coat a 1-quart oven-proof casserole dish with nonstick cooking spray.

2In a medium bowl, whisk eggs, milk, sugar, molasses, salt, vanilla, cinnamon and nutmeg. Stir in cooked rice and raisins, if using.

3Place in prepared casserole dish and cover. Bake 1 hour, or until mixture is set (when stable knife inserted in center comes out clean).

4Serve warm or chilled, topped with a dollop of whipped cream, if desired.
