Although it is "mud" there is no chocolate in this recipe. It is a very refreshing summertime dish, although I serve it year round. It takes a little time to put together but it is well worth it.

Ingredients For mississippi mud

2 cwalnuts, chopped & divided

1 call purpose flour
-
1 stickbutter, melted
-
1 cconfectioners' sugar

1-8 ozcream cheese, room temperature

2-3oz pkgvanilla pudding, cook kind

1-12 ozcool whip, thawed
-
3 - 4bananas, sliced
-
coconut
-
maraschino cherries
How To Make mississippi mud

1Cook the pudding. Let cool.

2Preheat oven to 400. Mix together the flour, 1 cup nuts and the butter. Press into a greased 13 x 9 pan. Bake for 15 minutes. Let cool.

3After the crust and pudding are cool. Mix together the cream cheese and confectioners sugar, then fold in 1/2 of the cool whip. Spread on cooled crust.

4Spread the cooled pudding onto the cream cheese layer. Place the sliced bananas on the pudding, lightly pressing them into it.

5Spread the remaining cool whip over the pudding.

6Put the coconut, remaining nuts & the cherries on top of the cool whip. Let set at least 4 hours or overnight.
