Creamiest rice pudding ever. I use short grain rice, but long grain works well, too.

Ingredients For liz's rice pudding

  • 1/2 c
    rice
  • 1 c
    water
  • 1 pinch
    salt
  • 1/2 stick
    butter
  • 4 c
    whole milk
  • 2
    eggs
  • 1/2 c
    sugar
  • 1 tsp
    vanilla
  • 1/2 c
    raisins
  • cinnamon

How To Make liz's rice pudding

  • 1
    cook rice, water, salt 20 min or until water is absorbed.
  • 2
    Add butter and stir. Add milk and simmer about 1 hour until creamy.

    Beat eggs, sugar and vanilla. Remove cooked rice/milk mixture from heat and add egg mixture and raisins. Do not cook any further. Pour into 8 x 8 casserole and sprinkle with cinnamon.

    Chill. Serves 6
