This is a very delicious filling for jelly rolls , cupcakes or for filling in donuts. I like to pour it on top of a red velvet cake and then sprinkle with coconut

Ingredients For lemon filling

  • 1 c
    sugar ; divided
  • 1/4 c
    cornstarch
  • 1/4 tsp
    salt
  • 1 1/2 c
    water
  • 3
    egg yolks
  • 2 tsp
    margarine
  • 1/3 c
    lemon juice
  • 1 1/2 tsp
    lemon rind, grated

How To Make lemon filling

  • 1
    In the top part of a double boiler ; Blend 1/2 cup of the sugar , cornstarch , salt and the water ; cook over top of boiling water until thick ; Cover and continue to cook 10 minutes longer , stirring occasionally.

    Beat the egg yolks and the other 1/2 cup of the sugar ; Blend into the hot mixture ; Cook for 2 minutes , constantly stirring.

    Remove from the boiling water and add the margarine , lemon juice and grated rind.
