This is a very delicious filling for jelly rolls , cupcakes or for filling in donuts. I like to pour it on top of a red velvet cake and then sprinkle with coconut

Ingredients For lemon filling

1 csugar ; divided

1/4 ccornstarch

1/4 tspsalt

1 1/2 cwater

3egg yolks
-
2 tspmargarine

1/3 clemon juice

1 1/2 tsplemon rind, grated
How To Make lemon filling

1In the top part of a double boiler ; Blend 1/2 cup of the sugar , cornstarch , salt and the water ; cook over top of boiling water until thick ; Cover and continue to cook 10 minutes longer , stirring occasionally.

2Beat the egg yolks and the other 1/2 cup of the sugar ; Blend into the hot mixture ; Cook for 2 minutes , constantly stirring.

3Remove from the boiling water and add the margarine , lemon juice and grated rind.
