Been seeing folks mention lemon curd in comments about recipes and thought since I looked it up, I'd share the recipe I found

Ingredients For lemon curd

2whole eggs
-
2egg yolks
-
1 1/2 csugar
-
2 Tbspgrated lemon rind

2/3 clemon juice
-
2 stickbutter or margarine
How To Make lemon curd

1Beat eggs, yolks,and sugar in top of a double boiler with electric mixer until light and fluffy. 3 to 5 minutes

2Beat in rind, juice and butter.

3Cook stirring constantly , over hot, not boiling water until mixture thickens, about 15 minutes.

4Remove from heat, cool.

5Spoon into jars, seal; refrigerate for up to 2 weeks
