This recipe started out as a casserole pudding type recipe, but ended up as a souffle. My family likes it. I served it last Christmas and it was enjoyed by everyone and they wanted the recipe. I hope you try it and enjoy this holiday pudding/souffle too.

Ingredients For yam souffle

5 mdsweet potatoes, boiled, peeled and mashed

1/3 cbutter

1 1/4 cbrown sugar, packed

4 lgegg yolks, reserve whites

1/2 csherry
-
1 dashsalt
-
1 tspnutmeg
-
1/4 tspground mace
-
2 lgreserved egg whites, stiffly beaten
How To Make yam souffle

1Cream together the butter and sugar and mix in the beaten egg yolks, the mashed sweet potatoes, sherry and seasonings. Fold in the egg whites and pour the mixture into a buttered casserole and bake at 350^ for 40 minutes.
