This recipe started out as a casserole pudding type recipe, but ended up as a souffle. My family likes it. I served it last Christmas and it was enjoyed by everyone and they wanted the recipe. I hope you try it and enjoy this holiday pudding/souffle too.

Ingredients For yam souffle

  • 5 md
    sweet potatoes, boiled, peeled and mashed
  • 1/3 c
    butter
  • 1 1/4 c
    brown sugar, packed
  • 4 lg
    egg yolks, reserve whites
  • 1/2 c
    sherry
  • 1 dash
    salt
  • 1 tsp
    nutmeg
  • 1/4 tsp
    ground mace
  • 2 lg
    reserved egg whites, stiffly beaten

How To Make yam souffle

  • 1
    Cream together the butter and sugar and mix in the beaten egg yolks, the mashed sweet potatoes, sherry and seasonings. Fold in the egg whites and pour the mixture into a buttered casserole and bake at 350^ for 40 minutes.
