This is a recipe from my mom-in-law, Elaine Conforti's recipe box. I've added it exactly as she had it written.

Ingredients For indian pudding

2/3 cyellow corn meal
-
4 1/2 cmilk
-
1/4 cbutter
-
1/2 cmolasses
-
1 tspsalt

1/4 csugar

1 tspcinnamon
How To Make indian pudding

1Preheat oven to 325

2Scald 3 1/2 cups milk in top of a double boiler over direct heat.

3Mix cornmeal with remaining 1 cup cold milk. Add to scalding milk, stirring constantly; place over boiling water to cook for 20 mins, stirring frequently.

4Add butter, molasses, salt, sugar & cinnamon. Pour into greased 1 1/2 quart baking dish.

5Bake at 325 to 350 for 1 1/2 hours. May be served with cream or vanilla ice cream.
