This is a recipe my son gave me and it is super-good! Forget those little plastic cups you buy at the store. This is the real deal AND it's heart-healthy! 10-03-15

Ingredients For heart-healthy tapioca pudding

  • 2-3/4 c
    fat-free milk
  • 1/3 c
    sugar
  • 2 lg
    egg whites, lightly beaten
  • 3 Tbsp
    quick-cooking tapioca
  • 3/4 tsp
    vanilla extract
  • 1 pinch
    ground nutmeg
  • ¼ c
    slivered almonds, dry-roasted (about 1 oz.) - optional

How To Make heart-healthy tapioca pudding

    In a 2-qt. saucepan, mix milk, sugar, egg whites, and tapioca and let stand for 5 minutes. Bring mixture just to a boil over medium heat, stirring constantly. Remove from heat and stir in vanilla and nutmeg.

    Transfer pudding to a medium bowl. Place plastic wrap directly on surface and let pudding stand at room temperature for 20 minutes.

    Stir and pour into 4 individual serving dishes. Sprinkle with almonds if desired. Serve warm or chilled.
