This was my Grandma Lil's recipe from Sweden, it is more custard the the normal rice pudding recipes and not as much rice. My dad is 92 and I still make this at least once a month for him.

Ingredients For grandma lil's rice pudding

  • 4 c
    milk
  • 1/2 c
    rice, long grain
  • 1 tsp
    salt
  • 4
    eggs, beaten
  • 3/4 c
    sugar
  • 1 tsp
    vanilla
  • 1 1/2 tsp
    cinnamon
  • 1 1/2 tsp
    grated fresh nutmeg

How To Make grandma lil's rice pudding

    Butter a 2 quart oven proof bowl.

    Pour milk, uncooked rice and salt in the top of a double boiler. Cover and cook for 1 hour, stir once to break up rice.

    Beat eggs, sugar, vanilla, cinnamon and nutmeg until blended and pour into butter bowl.

    Mix small amount of hot milk mixture into the egg mixture to temper. Then add all of the hot mixture to the egg mixture. Place bowl in a pan of hot water on the middle rack of your oven and bake for 1 hour at 350 degrees.
