This is one of my favorite custards my gram made when I was a child. Mom had her recipe and finally shared with me. Now, my kids can enjoy it as well. Yum!

Ingredients For ~ grams comforting rice custard ~

  • 7
    beaten xl eggs
  • 3/4 c
    sugar
  • 1/2 c
    evaporated milk
  • 2 c
    milk
  • 1 c
    cooked, long grain rice
  • 4 oz
    pineapple tid bits and juice ( like snak pak size )
  • 7 1/2 oz
    ricotta cheese
  • 1 1/2 tsp
    vanilla
  • sprinkle
    of cinnamon

How To Make ~ grams comforting rice custard ~

    Cook rice and set aside. Preheat oven to 350 degree F. Butter a 9 x 13 casserole dish.

    In a large bowl, whisk eggs. Whisk in the sugar,well.

    Next add milks, vanilla, pineapple and juice, rice and ricotta cheese. Whisk until thoroughly combined. Pour into prepared dish and sprinkle the top with cinnamon.

    Bake for 45 minutes or until you can slide a knife in the center and it comes out clean.

    Serve with a dollop of whipped cream if desired. This can be eaten warm or cold. Delicious either way.
