I used to make this for potluck lunches at work. It was always a big hit ... at work and at home...because I always had to make 2! HAHA! It is family favorite and a great dish for potlucks at church and other get-togethers! It is quick and easy to make and delicious to eat! I just happened and to think of it the other day and just had to dig out my old recipe! Try it and I think you will like it too!

Ingredients For eclair pudding

1 boxgraham crackers

2 pkginstant vanilla pudding

1 lgcool whip
- TOPPING

1/3 ccocoa
-
1/4 cmilk
-
pinchsalt

5 Tbspmargarine

1 tspvanilla

1 cpowdered sugar
How To Make eclair pudding

1Mix pudding according to directions. Fold in cool whip. Line 13x9 pan with graham crackers. Pour layer of pudding. Continue layering ending with graham crackers.

2Bring to a boil the cocoa, milk and salt for 1 minutes. Remove from heat and stir in powdered sugar, margarine and vanilla until well mixed.

3Cool slightly and pour on top of graham crackers. Refrigerate at least 4 hours before serving.
