How To Make creamy rice pudding
-
1Bring 1 1/2 cups water to a boil in a saucepan, ( if using long grain rice use 2 cups water) stir rice into boiling water. Reduce heat to low, cover, and simmer for 20 minutes. If rice is not tender after the 20 minutes, add a bit more water and cook a bit longer. Mine was cooked within the allotted time.
-
2In a bowl mix 1 1/2 cups milk, sugar and salt. In the same saucepan as you cooked the rice, add the milk mixture. Cook over medium heat until thick and creamy, 15 to 20 minutes.
-
3While rice is getting thick, in a bowl; mix the remaining 1/2 cup milk with the beaten egg and spices.
-
4After the rice has thickened, whisk swiftly the egg and milk mixture into the rice, cook 2 minutes longer.
-
5Remove from heat and stir in the vanilla and butter.
-
6When serving, if desired, sprinkle top with additional cinnamon or nutmeg. It's delicious! Enjoy
