Do not even remember where I got this recipe. Had it for years. I love rice for main dish, side, or dessert. This is creamy and good. Do not use frozen whipped topping instead of cream. It is not as good.

Ingredients For butterscotch rice parfait

  • 1 pkg
    envelope of unflavored gelatin
  • 1 c
    hot milk
  • 1 pinch
    salt
  • 2 c
    cooked rice
  • 1 c
    chopped pecans
  • 1 c
    brown sugar
  • 1 c
    heavy whipping cream

How To Make butterscotch rice parfait

  • 1
    Dissolve gelatin in hot milk. Add salt, brown sugar, rice, and nuts. Stir until sugar is dissolved. Chill until partially set.

    Whip cream until soft peaks form. Fold into gelatin mixture. Chill until set or spoon into glasses and chill. Serve.
