Ingredients For blue & black baked berry pudding

2cups flour
-
2tsp baking powder
-
1/2tsp soda
-
1/2tsp salt
-
1/3cup butter or shortening
-
2/3cup brown sugar

1large egg
-
1tbsp, freshly squeezed lemon juice + 1 tsp minced lemon rind

1cup buttermilk
-
1cup fresh, blackberries, washed and drained

1cup fresh, blueberries, washed and drained
How To Make blue & black baked berry pudding

1Preheat oven at 350 degrees for 10 minutes before putting pudding in oven.

2Grease a 7 x 11 x 2 baking dish well and set aside until needed.

3In a medium size bowl sift the flour, baking powder, baking soda and salt. Set aside until needed.

4In a large bowl, blend the butter until smooth then add the sugar. Blend the mixture well then beat in the egg until fluffy.

5Next stir in the lemon juice and lemon rind, then add the flour and then the milk alternating. (start and finish with the flour) Mix until smooth and then fold in the berries.

6Bake at 350 for 30 - 35 minutes then increase the heat to 400 degrees and bake for 10 more minutes or until the pudding is golden brown.

7Serve plain with a little powdered sugar or try it with a nice rich lemon sauce or lemon or vanilla ice cream.
