I got this recipe from my mom many years ago...My younger son loves banana pudding and requests it all the time. You can't get in a hurry though, it takes time for the custard to cook, but well worth it~

Ingredients For banana pudding

1/2 cgranulated sugar

2 Tbspall purpose flour

1/4 tspsalt

2 cmilk
-
3 lgeggs-separated

1 tspvanilla extract

1 boxvanilla wafers

5-6 mdbanana's

1/4 cgranulated sugar
How To Make banana pudding

1Combine 1/2 cup sugar, flour & salt in a double boiler pot. Stir in milk, whisk to blend well. Cook over boiling water until begins to thicken. Stirring constantly.

2Remove from boiling water. Beat 3 egg yolks, adding slowly to the thickened milk. Whisk well, Return top of boiler to boiling water. Cook about 10 minutes or until thickened as custard should be; stirring constantly.

3Remove from heat; Add vanilla. Stir well.

4Preheat oven to 425 degrees.

5Line a 2 quart dish with vanilla wafers. Then add a layer of sliced banana's, and a layer of the pudding. I continue layering until out of custard.

6Beat egg whites with the 1/4 cup sugar until stiff peaks form.

7Spread on top of pudding. Bake for 5 minutes or until evenly browned.

8Cool. Refrigerate until ready to serve~
