baileys and chocolate cheese cake

I just love Baileys cheese cake, it's a nice treat now and again. This is a recipe that my friend give to me a few good years ago and I've stuck with this one ever since ,so i hope you like and enjoy ...:)

Ingredients For baileys and chocolate cheese cake

  • 3 oz
    butter
  • 16
    digestive biscuit (crushed)
  • 1
    tub of philadelphia cream cheese (500g tub)
  • 1 1/4 c
    baileys
  • 3 & 1/2 oz
    icing sugar
  • 10 & 1/2 oz
    double whipped cream
  • 4 oz
    grated chocolate
  • TO GARNISH
  • 1 oz
    grated chocolate for the top

How To Make baileys and chocolate cheese cake

    In a large bowl crush the digestive biscuits.

    Melt the butter in a pan , add the crushed digestives . Mix well until the biscuits have absorbed all the butter remove from heat.

    Press into the bottom of a 8inch springform tin, I use the bottom of a glass to press down the biscuits evenly . Then place into the refrigerator and allow to set just for 10 minutes while your doing the mixture for cheese cake.

    prepare the filling lightly whip the cream cheese, then beat in the baileys and icing sugar. Fold in the whipped cream and grated chocolate. when smooth spoon evenly onto the biscuits.

    Refrigerate and allow to set for a further two hours, once set remove and decorate with grated chocolate over the top. Serve straight away. There you have it, a delicious treat that will be hard to resist. Baileys Irish cream liqueur cheese cake ... enjoy... :)
