I HAVE MADE THIS FOR YEARS. IT IS SOOOOO GOOD AND NOT BAD FOR YOU. YOU CAN EVEN EAT AN 6 OZ. SERVING AND NOT GET TOO MANY CARBS OR CALORIES. MY OWN RECIPE, MY PIC TOO.

Ingredients For amazingly delicious berry fruit salad

  • 1 c
    light sour cream
  • 1 c
    light cream cheese, whipped or block, softened
  • 1 pkg
    4 serving size, fat/free, sugar/free instant vanilla pudding or regular instant pudding, (you can use banana, strawberry creame, coconut, or vanilla) dry.( most come in f/f and s/f varities)
  • 1 lg
    can crushed pineapple, in its own juice, juice and all
  • 2 c
    sliced, fresh, or frozen unsweetened strawberries
  • 1 c
    whole, frozen, unsweetened blueberries
  • 1/2 to 1 c
    chopped walnuts
  • 1 pkg
    16 oz. light cool-whip, divided
  • 1/4 c
    white granulated sugar, splenda white sugar blend or splenda granules, if needed (to taste)
  • 1/2 tsp
    red food coloring, helps to make salad more appealing but is optional

    IN VERY LG. BOWL, WITH ELECTRIC MIXER, MIX SOUR CREAM AND CREAM CHEESE UNTIL LIGHT AND FLUFFY. ADD: DRY, INSTANT PUDDING MIX OF CHOICE. ADD: CRUSHED PINEAPPLE AND JUICE. FOLD IN: BERRIES AND WALNUTS (SAVE A FEW FOR THE TOP). FOLD IN: 1/2 COOL WHIP AND SUGAR OR SPLENDA IF NEEDED. ADD: RED FOOD COLORING, IF DESIRED. TRANSFER: INTO A NICE SERVING BOWL. TOP: WITH REMAINDER OF COOL-WHIP AND A FEW WALNUTS. COVER: AND REFRIGERATE UNTIL READY TO SERVE (*APPROX. 4-5 HOURS OR OVERNIGHT GIVES FROZEN BERRIES TIME TO THAW AND FLAVOR TO SAVOR). COVER: LEFTOVERS AND STORE IN REFRIGERATOR. sOOOOOOOOOOOO GOOD YOU'LL WANT SECONDS!
