Ingredients For ali's banana pudding

  • 3/4 c
    sugar
  • 3 Tbsp
    flour
  • dash
    salt
  • 4
    eggs
  • 2 c
    milk
  • 1/2 tsp
    vanilla
  • vanilla wafers (to layer)
  • 5 or 6 md
    ripe bananas

How To Make ali's banana pudding

    Preheat oven to 425. Combine 1/2 c sugar with flour and salt in top of a double boiler. Mix in 1 whole egg and 3 egg yolks (save egg whites for Step 3). Stir in milk. Cook, uncovered, over boiling water, stirring occasionally, until thickened. Remove from heat, add vanilla.

    FOR EACH LAYER: Spread small amount of custard on bottom of 1-1/2 quart casserole; cover with layer of vanilla wafers. Top with layer of sliced bananas. Pour about 1/3 of custard over bananas. Continue to layer wafers, banana and custard, to make three layers of each, ending with custard.

    Beat remaining 3 egg whites until stiff but not dry. Gradually add remaining 1/4 c sugar and beat until mixture forms peaks. Pile on top of pudding, covering entire surface.

    Bake in preheated oven for 5 minutes, or until delicately browned. Serve warm or chilled.
